In this recipe without any animal origin ingredient, will be used a nutritious and tasty broth extracted from slow cooking organic vegetables.

Quinoa is a cereal with dual function since it has carbohydrates and all essential amino acids found in animal proteins, besides being a great protein source for vegetarians and vegans. It can be eaten cooked like rice or in several different preparations, as in this delicious savory. It is important to emphasize that the pumpkin will be steamed, the most suitable cooking method for preserving nutrients, texture and the food taste.

Pumpkin and Quinoa Kibbeh

Ingredients

  • 80 grams of quinoa grain
  • 215 grams of pumpkin
  • 55 grams of quinoa flakes
  • 5 grams of chopped parsley
  • 50 grams of chopped leeks
  • 1 pinch of Himalayan salt

Directions

Make the vegetable broth using the water from the cooking of carrot, garlic, onion, celery and bay leaves chopped into cubes. Leave them on low heat for 45 minutes.

Cook the quinoa in the vegetable broth for 12 minutes and set aside.

Steam the pumpkin until it is tender. Process it up to the point of mashed potatoes  and let it cool down.

Mix the pumpkin puree with the cooked quinoa, the quinoa flakes, the chopped parsley, the chopped leek and the Himalayan salt.

Shape the kibbehs.

Bake them in an oil-greased pan at 356°F for 15 to 20 minutes.
