Another aspect that also leads people to be afraid of it, is the replacement of animal protein. There is a myth that the meat would be a food richer in this nutrient, and to abandon it would cause a deficit of proteins. This is a big myth, as there are vegetable based products much richer in protein than animal flesh. In addition, a number of animal products can be replaced for other products, which facilitates the life of a vegetarian person.

Vegetarian kibbeh

  • 1 cup of wheat
  • 1 cup of texturized soy protein
  • 1 cup of grated carrots
  • 1 large chopped onion
  • Salt and black pepper to taste
  • 1/3 cup flour
  • 2 eggs
  • 1 cup fresh mint
  • Olive oil

Let wheat and soy protein hydrating for 30 minutes. Squeeze them to draw water. In a bowl, mix all ingredients and knead them by hand until they form a cohesive league. You may put it on a tray and bake it or else make the balls and fry them.

Lentil Burger

  • 1 cup of raw lentils
  • 1 clove of minced garlic
  • 1/2 chopped onion
  • 1/2 cup of parsley
  • 1 soup tablespoon of olive oil
  • 1 teaspoon of salt tea
  • 1 teaspoon of ground cumin
  • 1/2 cup of flour

Cook the lentils until they reach the point where it is possible to knead them with a fork. Drain the water and put it in a bowl, mixing well all the spices. Place the flour gradually until having consistency to model the burgers. Model the “steaks” with about 1,5cm thick. Take them to the freezer for an hour. After that, just prepare them in the pan.

Grated heart of palm with cream cheese

  • 1 glass of heart of palm
  • 150g of cream cheese
  • 1/4 cup fat-free milk
  • 1 tablespoon of tomato paste
  • Salt and black pepper to taste
  • 2 tablespoons of Parmesan cheese

Cut the heart of palm into slices and place them into an ovenproof dish. Blend the remaining ingredients except the parmesan cheese. Place the mixture in the refractory above the palm. Sprinkle with grated cheese and take it to a preheated oven for at least 20 minutes.
